During the cold Winter evenings, chocolate has become my guilty pleasure. I am quite able to finish an entire slab of chocolate but I feel soooo guilty afterwards! After I made these cookies, I discovered that because of the filling oatmeal, one or two was more than enough to satisfy my chocolate craving!

I love the smell of fresh lemon and even use the old lemon slices to shine my pots, a trick I learned from the months we stayed with my husband’s Granny!
The one thing I don’t like is seeing an old brown shriveled up half a lemon going to waste in the fridge. With so many good uses it just seems wasteful. Luckily, I found a solution to safely freeze lemon to preserve it and have it ready for when I’m thirsty or sick!
