During Winter we love our comfort food and soup is my favorite Winter warmer! Since the one thing we all agree on in our home is broccoli, I make it as often as I can in as many ways as possible. We eat broccoli raw, steamed or liquidized as soup. We call it “trees” and it’s one of our favorite green vegetables. If you’ll excuse the smell while cooking, it is very easy to prepare and cooks super fast.
I’ve always made the simplest form of broccoli soup. Usually just by steaming a few heads of broccoli and giving it a creamy texture is enough. We seriously love broccoli and we never have any leftovers.
This time, I added a few extra ingredients on a whim and shocked and awed the family with how delicious and creamy the soup turned out!
Creamy Broccoli soup with Cheddar cheese
- 2 Cloves of garlic
- 1,4 Lt Chicken stock
- 2 Heads of broccoli
- 1-2 Cups of grated cheddar cheese
- 2 Tablespoons of flour
- 250ml Cream
- Salt & pepper to taste
Fry the onion and garlic in some butter until it’s translucent. Be sure to rinse the broccoli well before cooking as it is very sandy.
Add the broccoli with stalks and heads chopped up. If you’re not not using a hand-blender like I do then chop the broccoli to about 1 cm pieces. Fry for about 5 minutes. Add the chicken stock and spices and let it simmer with the lid off for about 20 minutes or until soft. Once the broccoli is soft you can either blend it with a stick blender (optional). Lastly add your grated cheese and cream.
Chop and fry the bacon until crispy. Serve with warm, crusty bread and bacon bits to sprinkle on the top of your steaming mug of soup! The soup was thick, creamy and delicious and we literally cleaned our bowls with the bread to sop up every spec.
*For a vegetarian option just leave out the bacon topping. We loved the smokey flavor it added to the broccoli soup but you can totally leave it out if you prefer it without meat.
