Holidays are about feasting and spending time with family and friends! It’s also about indulging in sweet treats! I fully intend to make up for it in the new year. I’m sharing one of my yummiest treats we’ve had this holiday and that is a pineapple fridge tart.
Ringing in the New Year
Although holidays are a busy time of the year, we had loads of fun! We had a lovely New Year’s eve with an easy, small gathering. We live in a really lovely community so we spent the evening at the poolside.
Our other neighbors who were also poolside were all having a good time and sharing friendly greetings around. We had planned to stay home with the kids and have a quiet new year’s but had the unexpected pleasure of sharing the evening with family. The evening was quite perfect.
We had a braai (barbecue) so chatted around the fire all night long and ate meat off the grill.
We all swam (my feet were in the water) and the kids were obviously thrilled to swim and play outside until well after dark. Looking at the four kids, I remembered all the good times from my childhood when the grown-ups would braai and all my cousins could hang out. I just knew that this would be a night that they would remember for years to come, even though it was just a seemingly ordinary night.
By the time the clock struck 12 and we wished each other a happy New Year, everyone felt like something sweet. The pineapple fridge tart was our first meal for the year eaten at midnight!
How to make a Pineapple fridge tart
This pudding was easy enough to make that the kids could help make it. By mixing and layering just a few ingredients, I got a nice sweet-smelling pudding that the whole family agreed was a winner!
1 packet of tennis biscuits ( crushed )
100g butter (melted)
Crush the biscuits until broken. This is where the kids love to help. I place the biscuits in a ziplock bag and I let them either first punch the bag or lightly beat it with a meat tenderizer. It’s lots more fun that way! Add the melted butter and until just mixed through.
Scrape the mixture into the prepared dish and spread out. Work the crumbs up the sides of the dish and flatten with the back of a tablespoon (or your hands). Put in the freezer for 10-15 minutes to firm while you prepare the filling.
1/2 tin of condensed milk
1 tin of ideal milk
1 ( 400 gr ) tin ” crushed ” pineapple
2 pkts pineapple jelly
Mix the jelly with 1 cup of boiling water and stir until dissolved.
In a separate bowl, mix the condensed milk and ideal milk. Combine the two mixtures and add the pineapple crush.
Pour over crust and decorate with fine chocolate shavings.
Put in the fridge for at least three hours or overnight.
It’s a nice summer dessert for a Sunday or to take to a dinner party.
